Pesto Chicken Pillows

Chicken and pesto are two of my favorite ingredients to work with for dinner meals. As such, I'm always looking for new ways to combine the two into mouthwatering dishes. I came across this recipe at The Girl Who Ate Everything and had to give it a try.



What You Need
  • 1 8oz package cream cheese, softened
  • 1/4 cup basil pesto
  • 2 Tbsp sliced green onions
  • 2 Tbsp shredded cooked chicken
  • 1 can of refrigerated Grands biscuits
  • 1/4 cup melted butter
  • 2 cups seasoned Panko crumbs


How to Make It
1. Preheat oven to 350*F.

2. Line a baking sheet with foil. Spray the foil lightly with cooking spray.

3. In a medium bowl add the cream cheese, pesto, green onions, and chicken. Stir until combined.

4. Flatten out biscuit dough and spoon about 1/3 cup of the chicken mixture in the center.

5. Bring the corners of the dough together, pinching to seal.

6. Place the Panko crumbs on a plate.

7. Dip each chicken pillow in the melted butter.

8. Roll it in the Panko crumbs.

9. Place the chicken pillows seam side down on the prepared baking sheet.

10. Bake for 25-30 minutes or until chicken pillows have turned golden brown.

This will make 8 good sized pillows. One pillow was plenty for each of us.


I made this with Garlic Parmesan Pull Apart Bread and herb green beans. This recipe is particularly rich and I would recommend pairing it with a salad. Possibly a Caesar Salad.
