Garlic Balsamic Crusted Pork Tenderloin

This pork turned out pretty good. The marinated pork is always much more tender and juicy, this recipe was no exception. I marinated the meat for about 24 hours. However, the taste was not as flavorful as I expected for that amount of time.
Although this recipe was good, I recommend trying the Pineapple Teriyaki Pork Chops instead.

What you need
  • 1 pork tenderloin (about 1¼ pounds)
  • 1 Tbsp olive oil (for marinade)
  • 2-3 garlic cloves, minced
  • 2 Tbsp balsamic vinegar
  • 1/2 tsp ground mustard
  • 1 tsp coarse salt
  • 1/4 tsp freshly ground pepper
  • 1 Tbsp olive oil (for pan)

How You Make It
1. Mix together garlic, balsamic vinegar, ground mustard, salt, pepper, and olive oil in a small bowl.
2. Brush the mixture over pork. Marinate minimum 3-4 hours.

3. Preheat oven to 400*F.

4. Heat oil in a large, heavy sauce pan over medium-high heat.

5. Brown all sides of pork.

6. Transfer to casserole dish and put in oven.

7. Roast the pork 20-30 minutes, turning occasionally (internal temperature is at least 160*F).

8. Transfer pork to a cutting board and let rest 10 minutes before slicing.
