What You Need
- 4 medium zucchini
- 1/2 cup grated Parmesan cheese
- 1/4 cup shredded Parmesan cheese
- 2 Tbsp Herbs de Provence
- Olive oil
How You Make It
1. Preheat oven to 350 degrees.
2. Line a cookie sheet with foil and spray with non-stick spray.
3. In a small bowl mix cheese and herbs together.
4. Slice zucchini in half lengthwise, or into thirds if exceptionally thick.
5. Brush both sides of the sliced zucchini with olive oil and place on cookie sheet.
6. Sprinkle cheese mixture over the zucchini.
7. Bake for 15-20 minutes.
8. Broil for the last 3-5 minutes, or until cheese is crispy.
